TOMORROW is fish-loving Norway’s Constitution Day. In the history of Norway, May 17,1814 marks both the country’s declaration of independence and the triumph of constitutional government. The national Day for many starts with a ‘brunch’ where relatives and friends are invited to dinner parties with beautifully adorned tables. The National Day brunch is often a virtual ‘sea’ of seafood and other delicacies.

Norwegians ate 23 kilos of seafood per person in 2005, and cod is still the favourite, while salmon is takes a good second place on Norwegian plates.

A brunch buffet can be made focusing on fish and seafood. A good start is for instance salmon carpaccio or shrimp with avocado. Delicious salads and tasty bread are important accompaniments together with a good white wine, rosé wine or mineral water. The table spread and decorating is also important.
