THIS year’s Flavour of Shetland extravaganza (June 22-25) will see George McIvor, formerly executive chef at Baxters, and Donald Munro, development chef at Nestlé, undertaking cookery demonstrations.

The two Master Chefs will provide cookery demonstrations on Friday 23 and Saturday, 24 June to inspire locals and visitors alike to make the most of the enticing range of seafood products available.

The menu from Shetland Smokehouse includes smoked haddock chowder, pitta bread with marinated herring, and a selection of seafood wraps and open sandwiches.

In addition to selling Unstoyst’s fresh Shetland oysters, The Olive Tree has sourced a range of other high quality products from Shetland including crab, pork, bacon, squid, beef, smoked mackerel pate and smoked salmon.

The Great Wall will also make excellent use of local produce, combining Shetland salmon, scallops and lamb with a variety of oriental sauces to create some tasty dishes.

Commenting on the sheer variety of produce on offer, event organiser Nicola Halcrow said:

“It’s only really on occasions like these – when you bring together all of our fine food producers – that we can really appreciate what an amazing selection of produce we now have available in the islands. I hope that, not only does Flavour of Shetland successfully bring home to locals and visitors alike what a wealth of delicious food and drink is grown, caught and handmade here, but that we are able to spread the word further afield so that Shetland receives the culinary recognition it deserves worldwide.”
